We are fortunate to live in a country with four distinct seasons, providing us with a superb variety of foods. When ingredients are in season they taste better and are generally more nutritious.

By making a conscious effort to look out for fresh, tasty, British seasonal food we can rejoice in the wonderful fare grown on our doorstep and support those who work to produce it.

Because of the British weather and its seasonal variations, what we fancy eating changes throughout the year. For example, long summer days are perfect for fresh salads or alfresco evenings with friends sharing crudités and dips. In contrast, autumn brings with it dark evenings, cold winds and a hankering for warm, comforting foods. And in winter, of course, there is fabulous festive food to enjoy.

This cookbook is split into four seasonal chapters, crammed full of imaginative recipes to help you make use of the ingredients you have and cook delicious food to match the mood of each season. There are helpful suggestions for sourcing, planning, storing and preparing seasonal ingredients and a list of foods available during each season; this can vary by region and is also dependent on the weather.
